For the past few months, we’ve been having Homemade Pizza night, as a way to cut a few costs, and pull my little men into the kitchen to be my helpers.
We typically do just plain ole’ pepperoni pizza, but it was time for a change.
I had this hankering for a garlic chicken pizza with a creamy sauce, so I thought I’d see what I could whip up.
The crust recipe is from a friend
Pizza Crust
1 cup warm water
1 tsp sugar
1 Tbsp yeast
let bloom in a mixing bowl.
Add in:
2 1/2 cups flour
1/2 tsp salt
once completely incorporated, add:
2 Tbsp olive oil until just coating almost mixed in.
Let the dough stand for 5 minutes, then form your pizza crust (I can usually get 2 pizzas out of a batch.)
Add toppings
then bake at 425 for 18-25 minutes
For the Grilled Garlic Chicken Ranch Pizza
I marinated the chicken thighs in olive oil, 6 cloves of garlic, salt and pepper to taste in my fridge overnight.
I grilled up the chicken first then chopped it into bite size bits.
While the chicken was cooling a bit, I made the pizza crust.
Form your crust on a stone or in my case an airbake cookie sheet (works pretty well but I would like to get a stone)
Sprinkle your crust with a dusting of garlic powder or salt…. you wont be sorry!
Spread a good helping of ranch dressing on the crust, I also used this homemade ranch dressing recipe I found on Pinterest as my sauce. Sprinkle generously with mozzarella cheese, then scatter your chicken on top of that. I add a little bit of parmesan cheese and green onions on top just to give it a little added flavor and color.
