I know we already did a food post this week, and not to make excuses, but I am busy lady! Which, consequently, has had me revisiting some of my favorite slow cooker recipes. If you are like most of us, there are many days a week where you are running around like a crazy woman, and come 5:00 you have no idea what to make for dinner. Happens to everyone, right? On those days I try to get something in my slow cooker in the morning. Nothing makes me feel better than knowing we won’t have to eat McDonald’s because I planned ahead. It is the best feeling. Now, my issue with most slow cooker meals is they aren’t very healthy. Here are a few of my tried and true recipes that are not only easy, but they are relatively healthy as well!
First up, Mango Chicken Tacos. I serve these salad style most of the time, with rice, black beans, lettuce, and this dressing. I buy the mango salsa at Costco. Yum.
My sister tried this Chicken Tikka Masala recipe a few weeks ago, after a friend raved about it. I must admit, I was skeptical, as other slow cooked Indian recipes I have tried have always been a major flop. This one was awesome! EASY easy. I make a Butter Chicken (try this one on a night that you have more time. It is our favorite!) that I do like better, but this Tikka Masala will be made again and again because it is so simple. And my whole family ate it without complaint. Win win.
So, this recipe isn’t the healthiest. But, man is it good!! It is the more time consuming than any of the others, but still comes together pretty quickly. Plus, it is totally worth it! As the weather cools down we all need a little comfort food. These Smothered Pork Chops totally fit the bill!
